Hot Sauce: Flavor or Heat?

There are a lot of entrepreneurs here in the Northwest who like some heat!  Not all hot sauce makers have a goal of burning your face off though.  Many focus on flavor first, then a little

heat next.   We talked to Hoss Soss Boss Matt Kuerbis in Salem.  He and his wife Catharine started Hoss Sauce in 2016 and have already won some awards for their unique flavors.

Also an award winner:  Hot Mama’s Salsa in Portland.  Owner Nikki Guerrero got her first chance to sell salsa in a locally owned store in 2008.

 

If you’re like me, you judge how good a restaurant is based on their salsa and hot sauce.  I know as soon as I dip that first chip whether I’ll like the food!  It’s about flavor with some heat to me, not just as my mom likes to say “burning your lips off”.
