12 medium to large sized jalepenos or
8oz of softened cream cheese, 2 teaspoons paprika, 1 teaspoon cayenne pepper, 1/4 cup crushed pineapple-drained, 1 cup pulled pork or other bbq'd meat, 12 strips of bacon cut in half, a sweet bbq rub.
Preparation: Slice peppers lengthwise--seed and remove ribs inside peppers. In a mixing bowl--add cream cheese, pineapple and spices. Mix throughly. Stir in bbq'd meat and combine. Add 1 tablespoon to each pepper. Wrap each pepper with a strip of bacon and secure with a toothpick. Sprinkle bbq rub on each pepper.
Smoke for 1.5 hours, or until bacon is crispy. Take off the smoker, remove toothpick and gobble down!
