Last week, we smoked 2 whole chickens. This is what we did with the leftover smoked meat. Delicious! Nothing better than a homemade chicken pot pie. Try this recipe with any of your leftover barbecue. Sandi and I think you'll truly enjoy the results!
Ingredients: 1.5 cups smoked chicken, cubed, 1 can Cream of Potato soup, 1 cup thawed mixed vegetables, 1 cup all purpose baking mix, 3/4 cup milk, 1 egg, 1/2 tsp black pepper. 9 inch pie pan.
Preparation: Mix together in the pie pan,soup, 1/4 cup of milk, veggies, chicken, pepper. In a box, mix remaining milk, baking mix, egg. Blend thoroughly. Pour this over ingredients in the pie pan.
Start grill, and acheive 400F temperature. (Pre-heat 15-20minutes). Place pan in center of grill and bake for approx. 30 minutes, until hot and top is golden brown. Remove from grill, allow to stand for 10 minutes to let all ingredients settle. Cut and serve. MMMMMMMHUMMMM!
