This is a very spicy cocktail featuring Thai red chiles as a main flavor ingredient. It's not for the faint of heart or tastebuds. However, if you like living on the edge, this just might be a great cocktail for you.
Ingredients for the Thai Chile Simple Syrup" 1/2 cup white sugar, 1/2 cup water, 2 red Thai chiles, halved, 1TBL cracked white pepper corns.
1.5 oz. dry gin, 3/4 oz. lemon juice, 3/4oz. Thai chile simple syrup.
Preparation: To make the simple syrup--in a 1 qt. saucepan, bring water to a boil, add sugar, Thai chiles and peppercorns, Stir until sugar is dissolved. Allow to cool. Refrigerate over night, then strain to remove chiles and peppercorns.
For the cocktail---In a shaker filled with ice, add the gin, lemon juice and Thai chile simple syrup. Vigorously shake and strain into a cocktail glass. Garnish with 2 red Thai chiles. Bottoms up!
