February is National Potato month. Well, we couldn't let this special month pass without a bang! Here's a wonderful way to add some sparkle into your spuds! (Thanks
to my friend Sage Elmer for turning me on to this delicious way to prepare and
cook a potato!)
Ingredients:
1--medium
to large sized Russet or baking potato
1-TBL
grated cheese mix (cheddar, pepper-jack, mozzerella, Swiss etc)
1-TBL
chopped crisp bacon pieces or your favorite type of sliced meat
1-TBL
chopped green or white onions
Any
other ingredients you wish to add---black or green olives, etc.
3-6
slices of bacon per potato
toothpicks
Preparation:
Using
an apple corer, remove the center meat of the potatoes.
Save
the cores.
Stuff
the potatoes with your favorite deli meats, cheeses or anything you desire.
Insert
plugs on each end to seal.
Wrap
each potato with with bacon and then foil.
Bake
@ 350F indirect for an hour, or until done
