Sweet Potatoes---Sweet Potato Butter---use on pork or chicken or pancakes and waffles

Recipe: Sweet Potato Butter

Ingredients

§             2 cups mashed sweet potatoes

§             3/4 cup honey

§             1/2 tablespoon cinnamon

§             1/8 teaspoon ground cloves

§             1/8 teaspoon ground ginger

§             2 tablespoons lemon juice

Instructions

1.          Combine all ingredients in saucepan over low heat.

2.          Cook and stir until mixture is thick and smooth, about 25 minutes.

3.          Pour into two sterilized cups; cover and refrigerate.
