Fall is prime pear and apple harvesting season. Enjoy this wonderful autum side dish using the abundance of fresh apples and pears. It goes well with any kind of meat. Delicious!
Ingredients (four 4 people) 3 large bartlett or Anjou pears, 2 medium sized Braeburn or Fuji apples, ½ cup mayonnaise, 1 tablespoon dried cranberries, 2 tablespoons rice vinegar.
Preparation: julliane the pears and apples (use a food processor or Mandolin slicer). In a bowl, combine the mayo, fruit and dried cranberries, and rice vinegar. Chill for one hour prior to serving. You could substitute 3 teaspoons of lemon juice for the rice vinegar.
