September is National Potato Month...and we couldn't let it go by without finding a great way to enjoy potatoes on our grill...

Grilled Potato Skins: Great for weekends, tailgating and after work appetizers! I began experimenting with this recipe earlier this summer. Give it a try, alot of fun to grill up, and a lot of fun to eat.


Ingredients: 4-6 medium russet potatoes, 1/2 cup sour cream, 1/3 cup shredded cheddar cheese, 4 strips bacon-fried and crumbled, 3 green onions-chopped.

Preparation:
 Wash and dry potatoes. In your microwave, cook on high-approx 8 minutes. Remove and allow to cool. Cut length-wise in half, and scoop out flesh, creating a "boat" leaving about 1/4 inch of the potato meat inside the potato. Start grill on high and pre-heat 10 minutes. While grill is heating, fry bacon in a skillet and allow to drain and cool. Crumble bacon and hold back. Place potato skins on grill and cook until the skins are crispy-approx 10--15 minutes. During the last 4 minutes, add the cheese, bacon and onions. Allow cheese to melt. Remove skins from the grill, allow to cool, top with sour cream. Devour
