Watermelon Jam
Oregon is blessed with Hermiston watermelons. In my opinion they are the sweetest you can buy. They're in full production right now. But what can you do if you have a bunch of melons and don't want them to go to waste? Try this recipe for Watermelon Jam! 
Ingredients:
- 8 cups of watermelon, black seeds removed, separated from rinds, and cut into chunks
- 1/4 cup lemon juice
- 2 boxes of No Sugar Needed Pectin
