Smoked Salsa

I was talking with a friend the other day about salsas and avacado. We both love avacado. I told him about this smoked salsa recipe and he was drooling all over the phone. The smokey flavor enhances the ingredients.

Ingredients:  2 jalapeno peppers-seeded and halved, 1-2 medium sized avacados-diced, 2 medium sized tomatoes-diced, 1 white onion-skin removed, 2 TBSP calantro-coursely chopped, 1 TBSP mint leaves, finely chopped, 1 TBSP parsley, finely chopped, juice of one lime. Aluminum foil.

Preparation: Start grill and allow to come to smoke temperature (170-180F preferred), lay vegegtales on foil square large enough to hold all the raw ingredients. Smoke for 1-2 hours. Remove from smoker, then mash avacado, chop up onion, tomatoes and jalapeno peppers. Combine all ingredients in a bowl and chil for 2 hours in refrigerator. Serve with tortilla chips and your favorite adult beverage.
