Grilled Vegetable Packets

Grilled Vegetable Packet—got a call the other day from my buddy Bryan Griggs, wanting to know about cooking potatoes on his grill. Said, sure-do it all the time!  One of the easiest ways to do this is to quarter your potatoes, season them, wrap  in foil and cook for between 45-60 minutes until they’re done. But then! I got this idea for a potato packet!

Ingredients:  I’m going to give you the basics—you decide how many you need of each. Can pretty much use any combination of fresh veggies you desire—here’s a short list to get you started:

Ale Barbecue Sauce

Summer Ale BBQ Sauce. A number of years ago, I was hired by Henry Weinhards to develop a special barbecue sauce incorporating their new Summer Ale. The result of a lot of experimentation...and beers, was this sauce, which we found was delicious on chicken, salmon, pork, halibut.

Sweet Potato Cornbread

There's just something down-home satisfying as enjoying a freshly baked piece of hot cornbread, slathered with honey butter. Here's a twist on this classic Southern side dish using of all things...sweet potatoes!

Lemon-Sage Chicken

Lemon Sage Chicken: Sage is a wonderful flavor enhancer when used with chicken. Add some lemon along with it, and you have a delicious result.
