Would You Like Your Salt With Or Without Crickets?

The CEO of Oregon’s first edible food company is at it again. Charles Wilson is trying to get cricket salt to your table. Two years ago, he released cricket flour and has convinced some out there it’s a good option. Wilson says not only are crickets high in protein, they require fewer resources to farm and have a nice nutty taste. Those are his words, not mine. Anyway, he’s always fun to talk to, so I did.
