Brining your turkey will help to produce a more flavorful, moister bird. Brines help the turkey to reduce the amount of moisture lost in barbecuing or smoking. This recipe is simple and easy to do.
Ingredients:
1 gallon fresh apple cider
2/3 cup kosher salt
½ cup sugar
Optional spices: crushed allspice, cinnamon stick, whole clove
Directions: Pour cider into large sauce pan and add salt and sugar. Bring to a simmer and stir to dissolve. Let cool. Place turkey in double-lined roaster bags or in a plastic container that your turkey fits snugly into. Pour cooled cider brine over the turkey and secure the bag or cover the container. Allow to brine for 12-24 hours. Remove from brine, rinse thoroughly with cold, running water, pat dry and roast as normal. This brine allows for an exceptionally moist and tender turkey with a sweet subtle hint of apple
