Going to credit Listener Steve for reminding me to pull this one out of the Recipe File this week--a tasty, easy to make side-dish----Cheddar Cheese-Garlic Grits.
Even if you don't like grits, which are a staple in Southern households, this is really a very tasty side dish that you can enjoy with any type of meat or fish entree.
Ingredients: ½ cup Quaker Instant Grits, 2 cups water 1 tsp. salt, 1 cup grated SHARP cheddar cheese, 2 tsp. finely chopped garlic.
Preparation: On the stove, bring the salted water to a boil, add the grits and boil/cook for approximately 20 minutes, then begin to stir in the grated cheese and onions. Continue to cook until the grits are creamy or as package directions indicate. Remove from heat and serve with pepper and butter. YUMMY!
