The Lime Rickey

The ingredients for the rickey are simple: lime, sugar, soda, and ice. But as I've learned during my hunt for information about the drink (it's a variation on the rickey cocktail that became popular during prohibition) and experimenting with various ingredients on hand, I've realized that tiny variations like adding fruits, changing sweeteners, and working with different shapes of ice can elevate, intensify, and even entirely transform the drink.

Ingredients:1 medium-sized lime, cut into quarters, 1oz. fresh lime juice, 2-1/2 tablespoons white sugar, 8oz. club soda (optional--6oz. club soda, 2oz. gin), ice.

Preparation: Place lime wedges,lime juice and sugar into a pint glass. Muddle, mixing the sugar and limes. Add ice, and club soda. Mix and enjoy a tart, citrusy refesher!
