Oregon is blessed with Hermiston watermelons. In my opinion they are the sweetest you can buy. They're in full production right now. But what can you do if you have a bunch of melons and don't want them to go to waste? Try this recipe for Watermelon Jam!

Ingredients:

  • 8 cups of watermelon, black seeds removed, separated from rinds, and cut into chunks
  • 1/4 cup lemon juice
