Tropicale Fruit Sauce for chicken or pork: The flavor of fruit easily compliments pork and chicken. Have a Tropicale party and use this as a sauce to enhance any cut of chicken or pork. You can easily interchange ingredients to make it totally unique.
Ingredients:1 cup chicken broth, 1/2 cup honey, 1/2 cup unsweetened pineapple juice (substitute mango, guava or peach nector), 2 TBSP white vinegar, 2 TBSP grated orange peel (substitute lemon, lime or grapefuit peel), 1/2 tsp. freshly ground white pepper, 1/2 tsp. sea salt, 1 TBSP cornstarch (dissolved in cold water).
Preparation: In a saucepan, add juice, honey,broth,salt,pepper and citrus peel.Ove r medium heat, bring ingredients to a boil, stirring to mix ingredients. Reduce by 1/2 on simmer (approx. 10 minutes), Drizzle in cornstarch, stir and set aside to cool. Pour, baste, paint or dip cooked meat in sauce.
