Fresh Berry Compote for Pork, Chicken, Fish

Hey! It’s July---BERRY TIME in the NW! I love fresh berries. Can’t get enough of them as a matter of fact. Here’s an incredibly simple and savory compote or marinade to use on just about any type of fish you land.  Cooked-the recipe becomes a compote. Left cold, it’s a marinade. So try it out both ways and see which one you like.

INGREDIENTS:

3 Cups fresh berries (mix and match for variety or use one type-your choice)

1/3 cup white wine

1/8 cup olive oil

¼ cup mint or rosemary leaves

1 tsp. Garlic powder

(heat option: 1-2 tsp. Cayenne pepper)

 

HOT VERSION:

For COMPOTE: In a 2 quart sauce pan, add all of the above ingredients. Simmer over low heat for 10-15 minutes, gently stir to mix ingredients without breaking down berries. Remove from heat, allow to cool, then spoon over cooked fish before serving. Or place in a bowl and serve at the table.

 

COLD VERSION:

For MARINADE: Juice and strain the berries. Take all of the ingredients place in a large enough resealable bag, add fish. Close bag securely, then marinate in your refrigerator for 1 hour. Remove fish, grill or smoke.
