6-drumsticks, 6 thighs, 1 qt.buttermilk, 1/2 cup chopped shallots,2 tbl. sea salt, 2 tbl. table sugar, 2 tbl. chopped garlic,1 tsp. cumin, 1 tsp. black pepper.
In a large bowl, add buttermilk, shallots,garlic,cumin and pepper. Rinse chicken,towel pat dry and place in buttermilk mixture. Cover and chill for 3 hours. After "brining", remove chicken, towel pat dry. Start grill and bring to a grilling temperature of at least 350-400F. Place chicken on grill and cook approx. 10-12 minutes per side, or until internal temperature reaches 170F. Remove, and savor!
