Dungeness Crab On The Grill

Flavorful fresh-caught Oregon Dungeness crab provide a healthy meal start to the New Year. They're easy to prepare and cook. Here's a way to enjoy one of these jewels of the sea.

Ingredients: 2 large (live) Dungeness crab, 1/4 cup white wine vinegar, 2.5 tablespoons white sugar, 2 tablespoons olive oil, 1 jalepeno pepper-seeds removed and minced, 1 tablespoon ginger-minced, 1 tablespoon cilantro-minced.

Preparation: Mix vinegar, oil, ginger, jalapeno, garlic cilantro and tomato in a bowl. Set aside for grilling.

Bring a large pot of water to a boil. Drop crabs, one at a time, head first into boiling water. Boil, then reduce heat and let simmer for 5 minutes. Remove crabs from water. Place in cold/ice water to cool. Pull of triangular tab from belly. Lift off the shell.

Clean entrails and gills from crab,wash and drain. Place on pre-heated grill at a temperature of 300F. Cook with lid closed, brushing with mixture occasionally. Turn over half way through grilling. Crabs are done when the meat in the leg is opaque. About 10 minutes. Optional: Smoke for 45 minutes, then crank up heat to cook crab meat.
